Chef Ryan Vargas is Chef de Cuisine at Emeril’s Tchoup Chop in the Loews Royal Pacific Resort at Universal Orlando. Born and raised on the island of O’ahu in Hawaii, Chef Ryan brings to Orlando Aloha and Pacific Rim cuisine with an Asian Fusion twist.
He developed love and passion for cooking from his grandmother, grandfather and especially his father, a Master Chief Chef for the U.S. Navy. After deciding at the very early age to become a chef, Chef Ryan began to pursue his career by graduating from the Culinary Institute of America. Before being selected for this position by Emeril Lagasse, Chef Ryan spent 13 years leading many prestigious kitchens at the finest resorts in Hawaii and Florida.
The restaurant is named for Tchoupitoulas Street in New Orleans, the location of the Emeril’s flagship restaurant. Upon arrival, you will be greeted by stunning chandeliers of cascading flowers and a reflecting pool with crystal clear water and porcelain water lilies.
The menu features mainstay dishes such as Tchoup Chop Crunchy Shrimp and Kiawe – Smoked Pork Ribs and exotic selections such as Ahi Poke Rice Bowl and Sesame Ahi Tuna. We agree with Chef Ryan: Hawaiian cuisine is not just coconut and pineapple.

Walt Disney World Swan and Dolphin Resort held its Fifth Annual Food & Wine Classic on October 31st and November 1st. The event offered guests an opportunity to eat, drink, mingle, learn, and then watch the famous Disney fireworks.
Guests sampled food, wine, beer and spirits from around the world, enjoyed live entertainment, and attended educational seminars, on subjects ranging from pasta-making to sushi.
New this year was the Beer Garden on the Crescent Terrace, featuring beers from around the world and German-style bar snacks such as handcrafted sausages, soft pretzels, weiner schnitzel, sauerkraut and potato salad.
It was a great opportunity to meet award-winning Chefs of Walt Disney World Swan and Dolphin Resort including celebrity chef Todd English and Laurent Branlard, the only two-time winner of the World Pastry Team Championship.
John Rivers is a self-taught chef and owner of fast-growing 4Rivers Smokehouse and The Coop. 4Rivers became a household name for Texas-inspired brisket, a recipe and technique Chef Rivers perfected over eighteen years. He is also known for his involvement in local school and community-based charitable organizations.
This spring, he opened The Coop, a southern-inspired casual dining concept, in Winter Park. The Coop provides Chef Rivers with a venue to create seasonal dishes with locally grown ingredients. The menu includes selections you might have eaten growing up in the South.
4Rivers Smokehouse has 5 locations – Winter Park, Winter Garden, Longwood, East Orlando, Jacksonville and Gainesville, Florida. The Coop, located at 610 West Morse Boulevard in Winter Park, is now open for breakfast.
